tataki
One of Japanese dishes, usually bonito tataki or chicken tataki. It’s outside is grilled, but the inside is raw, so you must use fresh bonito or chicken to cook tataki. How to cook tataki is the following;
1) Grilled only surface of bonito or chicken usually over the charcoal.
2) Put into cold water with ice cubes
3) Whip off water on the surface with paper towel
4) Sliced like sashimi
