shio-jime (塩締め)
To sprinkle salt on fresh sashimi to drain water.
A Japanese cooking method.
How to make shio-jime is the following;
1) Sprinkle salt, which is 1% of the weight of fish, on fresh sashimi.
2) Wrap it with paper towels and then with plastic wrap.
3) Put it into a refrigerator. (1〜5℃)
4) Wait for arround 5 days. Everyday you need to check the paper towels, and if they are wet, change to new one.
