Pickled vegetables.

How to make tamari-duke is the following;
1) pickle vegetables with salt.
2) put the pickled vegetables into the water with 1% salt, sake, and mirin. (This cooking method is called shio-nuki in Japanese. Shio means salt, and nuki means pulling out.) 3) last, after shio-nuki, put the vegetables into soy sauce with some other multiple seasonings
